Taffy Update

In my search to at least make an attempt to post something, I found a fun little update about the real “Taffy.” First of all, Kristi completed a Valley of Treasure Goldtown Adventures lapbook activity the other day. In the book, Aunt Rose packs a grub sack for Jem, Ellie, and Strike to take along on their search for the valley in which they think they might find the gold they lost five years before. The molasses cookies turned out perfect (so Kristel says), and Kristi wanted to share one with Taffy. So she did, and Taffy gobbled it up.

Here is the recipe for soft molasses cookies like Jem and Ellie ate on the trail:

Molasses Cookies

  • 3/4 cup lard (Crisco for modern cooks)
  • 3/4 cup brown sugar
  • 1 egg and 1/2 cup molasses
  • 2 1/2 cups flour and 2 tsp. baking powder
  • 1 tsp. each of cinnamon and ginger
  • 1/2 tsp. nutmeg
  • white sugar to roll cookies in before baking

Beat lard, brown sugar, egg, and molasses until well blended. Add flour, baking soda, and spices. Blend well. Chill for one hour. Heat oven to 250 degrees. Roll chilled dough into small balls. Roll in sugar and place on baking sheet 1-2 inches apart. Bake 8-12 minutes until set. Do not overcook! Enjoy!

Kristel noticed that Taffy has been limping a lot and lying down a lot. Come to find out, she has a serious condition in her right leg bone. It’s twisted and causes her to limp painfully and be prone to laminitis. Kristel ordered some special boots with pads but in the meantime, Taffy prefers to take it easy. This short video has Kristi making her way to Taffy in order to sit on top of her. It didn’t turn out as well as we’d hope (Taffy was not sure about the whole thing) but you can see Maggie and Taffy and they are all clean and pretty. (And Maggie is still pg.)
