I do believe Riley has gifted me with one of the most unique anniversary gifts!

Growing up I’ll be the first to admit I would much rather have gotten a new saddle, lasso, or something of that sort as a gift. But now, being the mother of three young ones, I’ve discovered I have a liking for handy tools in the kitchen.

Riley’s gift is one of the latest gadgets. I’ll confess that although I was skeptic at first, now I’m excited to begin using it. You know what he gave me? A waffle iron! It looks much like this one:

Yesterday afternoon, Jared was helping his daddy in the barn and the twins were taking a nap, so I decided to use my new waffle maker right then and there.

My first problem was when I realized I had no waffle recipe to follow. Then it hit me that I already knew how to make Cook’s sourdough pancakes! I figured waffles shouldn’t be much different from pancakes, so I threw all the memorized ingredients into a bowl and whisked them together. On an impulse, I decided to add an egg and some wild blueberries the twins had just picked.    

I only hope the waffles turn out! Especially since they are going to be supper.

I was happy to discover the waffler iron wasn’t as difficult to master as I’d first expected (I only burnt a few of the waffles). I simply heated it on top of the wood stove, greased it, added the waffle batter, and cooked until done.

It was wonderful to see Riley’s eyes light up when he took his first bite of the waffles. He must have really enjoyed them because he refilled his plate twice! They were so fluffy and delicious, I could hardly believe it.

The waffle iron turned out to be a wonderful anniversary gift! Oh dear, I’ll have to think of something equally unique to get Riley for our next anniversary…

Blueberry Sourdough Waffles

  • 2 cups all-purpose flour
  • 2 Tablespoons sugar
  • 2 cups milk
  • 1 cup active sourdough starter
  • 1 egg
  • 2 Tbsp. melted butter, cooled
  • ½ cup fresh blueberries

Preheat a waffle iron.

Whisk all ingredients together (except for the blueberries) until combined. Next fold in the blueberries. Ladle portions of the batter onto a lightly greased, preheated waffle iron. Cook until golden and crisp. Serve with warm butter and syrup and enjoy!
